A grown-up cocktail party requires adult tipples, such as this wintry Old Fashioned. The ginger and pomegranate add a sense of occasion, but the preparation remains simple.

Servings: 6 cocktails

Ingredients

1 large piece ginger

2 cups water

1 cup sugar

6 oz bourbon

1 lime

6 dashes Angostura bitters

1/2 cup fresh pomegranate seeds

Method

Peel 2 4-inch pieces of ginger and cut into slices. You will have about 1/3 cup sliced ginger. In a small saucepan, combine ginger slices, water and sugar and bring to a simmer, mixing occasionally. Allow to boil gently until liquid thickens and takes on ginger colour (about 12 minutes). Set aside to cool.

Measure 1 oz bourbon into each of six Old Fashioned glasses. Add 3 tablespoons ginger syrup into each glass (along with a generous squeeze of lime, a dash of bitters and a spoonful of pomegranate seeds), mix gently and add ice. Garnish with a twist of lime, if desired. (Transfer leftover candied ginger to a rack to dry and enjoy as a spicy treat.)
