Although it fails to get as much love as its Dark 'n' Stormy cousin, the Moscow Mule (the ship that launched vodka in the 1950s) deserves to be celebrated in its own right. It's spicy and refreshing, easy to make and even easier to drink. Aja Sax, manager of Toronto's Beverley Hotel, suggests adding chamomile tea to give it a herbal twist.

Mellow Mule

one ounce vodka

1/2 ounce fresh lime juice

1 1/2 ounces cooled chamomile tea

Grace Ginger Beer

Fresh thyme to garnish

Method

In a tall glass, add one ounce vodka, 1/2 ounce fresh lime juice and 1 1/2 ounces cooled chamomile tea. Stir, add ice and fill with Grace Ginger Beer. Garnish with fresh thyme.
